Mexi-zuelan Dinner

Table and candle is a restaurant pop up platform, established in london in 2018. They have hosted dinners for over 100 chefs from all over the world. I created a mexican and venezuelan inspired, 6 course tasting menu exclusively for Table & Candle, showcase some of the best recipes and ingredients of these two gastronomies. 

 
 

 

MENU

Green, corn empanada, black beans, fresh cheese with an guasacaca sauce

Roasted plantain, avocado emulsion, cheese, coriander, flowers & grasshoppers

 Catch of the day with pisto criollo fillet of white fish with Venezuelan “ratatouille” 

Caramelised brisket, slow cooked in banana leaf, cassava tortillas & pickled red onions

Plantain churros with two sauces: chocolate & chilli and mezcal caramel
