Superbia is a 6-week food and crafts festival organised by Unico Hotels in the Rivera Maya. The festival brings chefs from all over the world to cook for one week at their hotel. The residency aims to display the talent and craftmanship of each chef and artisan. It also includes various events with mixologists and plastic artists. Many of the talents participating in this festival included Kiko Moya (2 Michelin stars), Derek Deckman (1 Michelin star), Jose Luis Leon (ranked #4 mixologist in North America), among others…


I developed a bespoke menu for this residency, combining Mexican and Venezuelan gastronomy, to pay tribute to my roots as well as to the hosts.

Corn empanada with chaya filled with black beans and cheese

Seafood tostada with cherry tomatoes confit and jalapeños  

Catch of the day with criolla sauce of red bell peppers and capers with rice

 Glazed short rib tacos with pickled onions and cilantro cress

Plantain churros with choco-chilli and mezcal caramel sauces
