Essentia, revealing the layers of taste

The result of a combination of ideas, facts and experiences all relating to our relationship with our sense of smell. I set out to create an experience with perfumes, where the flavour pairing came from both mouth and nose. Researching for this dinner, I realised that perfumes are built in layers in a similar way to our personalities are built and as we reveal ourselves.

I structured the menu and the order of the dishes to represent the layers of perfumes – by using certain smells – and also the layers of our personality – first appearances, our memories, our dark side – with each dish presented as a ‘layer’. - in partnership with We Crave Design ~ Madrid

Campari granita with textures of carrots

Cauliflower veloute, roasted celeriac, grilled fennel, dill pollen and green apple

Pork loin, rose emulsion, cured egg yolks, cassava gratin and lychee chutney 

Lavender and rosemary polenta cake, figs, yoghurt and sloe gin 

Coffee-baked sweet potato, beurre noissette, hazelnuts and smoked milk
