Cacao

The first food experience I created was inspired by the cacao fruit and its versatility.
The five-course menu follows the process from fruit to cacao’s most loved product, chocolate. Each course uses a by-product the process generates and represents a part of the chocolate-making process, while also sharing the origin and context that cacao is grown.

Gambas, comte and caramelised onion, cocoa nibs tuile 

Cauliflower and cocoa butter veloute with white chocolate brioche croutons 

Pulled pork in red mole ravioloni with aguacambur

Chicken liver parfait, Bristol cream,  cocoa nibs tuile 

Cauliflower and cocoa butter veloute with white chocolate brioche croutons 

Venison in black mole,  potato Dauphinoise, roasted beets
